This is close to a recipe found in the 70s. Low fat plain yogurt replaces cream. Little milk. Turn in whisked eggs, 3 I think, small amount if onion, S&P, at least 1/2 cup jack and cheddar cheese. Sprinkle cayenne pepper on top. Bake. Last 10 minutes add 1/4 cup or more cheese to the top. EVERYBODY loved this receipe. I’m not a seasoned baker. Used Pillsbury frozen pie crust.

Feta is so yummy, and goat dairy can be easier on baby tummies. Maybe try reducing the amount of feta or use cheve instead?

The one complaint is the pre proofing the crust. I am familiar with this from making fruit pies. Proofing adds another half hour to 45 minutes to the prep time (including the homeade crust). So, ,for this one quiche, you’re suggesting at least two hours! I don’t know about the rest of you, but I would cut out the proofing step. As a quick alternative, first prick the crtust with a fork and then brush some whipped egg white along the bottom.
